Pancakes for breakfast – recipe

Easy to make and fun for all the family, especially if using moulds to make playful shapes. The kids will love to get involved, and after a few attempts they will probably remember the recipe by heart.

However I would suggest it as a weekend only treat, not a part of your daily diet, because it can include a lot of calories if covered in syrup and fruits.

Here’s the recipe for 2x pancakes
🥞 Ingredients

  • 30g plain flour
  • ½ tsp baking powder
  • 1 tsp caster sugar
  • Pinch of salt
  • 1 small egg (beaten)
  • 40–45ml milk
  • 1 tsp melted butter (plus a little for the pan)

👩‍🍳 Method

  1. Mix flour, baking powder, sugar and salt.
  2. Whisk in the egg and most of the milk until smooth.
  3. Stir in the melted butter.
  4. Add a splash more milk only if needed — the batter should be thick and spoonable, not runny.
  5. Heat a lightly buttered pan on medium-low.
  6. Spoon in batter without spreading.
  7. Cook 2–3 mins until bubbles form and edges set, flip, then cook another 1–2 mins.
  8. Top with fruits (strawberries, blueberries and bananas go very well) 🍓 🍌 and some maple syrup

    For health reasons, just be careful not to have too much sauce/syrup and sugar.
